Oven Swiss Steak

Cube steak that is smothered in a beef gravy and mushrooms. Goes great with mashed potatoes.

Equipment

  • 1 13x9x2 backing dish
  • 1 large skillet Cast iron is preferable, but you can use an electric skillet also.

Ingredients
  

  • 1.5 lbs boneless round steak
  • 4 tbsp All-Purpose flour 1/2 for steak and 1/2 for gravy
  • 1/4 tsp salt
  • 1/4 cup vegetable oil
  • 16 oz can tomatoes undrained and chopped
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1/2 cup chopped onion
  • 1/2 tsp soy sauce

Instructions
 

  • Pound steak in 1/4-inch thickness and cut into serving pieces
  • Combine 2 tbsp of the flour and salt
  • Dredge steak in flour and brown in hot oil in large skillet
  • Remove from large skillet and place in a lightly greased 13x9x2 inch backing dish
  • Add remaining 2 tbsp of flour to skillet drippings and cook for 1 minute stirring constantly
  • Add tomatoes, celery, carrots, and onion and cook until thickened, stirring constantly.
  • Stir in soy sauce and pour mixture over steak.
  • Cover and bake at 350° for 1 hour and 15 minutes or until steak is tender
